Give

ThanksGIVING.

Give thanks. Give love. Give happiness.

Holidays are great to gather, have fun and create memories, but I think they're also a great time to reflect on life. And as Socrates once said, "A unexamined life is not worth living". Learned that once in 9th grade English (Go Langley!).

Each Thanksgiving meal, my family gathers and we go around the table and say what we're thankful for. Basically, we say what have we RECEIVED in the past year that we're thankful for. It's a nice few minutes of sharing and it gets conversations flowing. This year, my mindset is a little different.

What about thinking of ways I can give? Giving to others is way more rewarding than receiving. Isn't it? At least for me it is. Whether it's to donate to a charitable organization or give your time to loved ones, I believe giving warms the heart and soul.

I went through a Chick-Fil-A phase. I loved eating there. Literally. I loved going in, ordering, sitting down and enjoying my meal there. Why? It's fast food. It's just like McDonald's, Wendy's or Burger King. WRONG! Every visit, I was continually impressed by the warm welcome, happy order-taking and homey customer service. Every visit, I sat back, ate my chicken nuggets and waffle fries with Polynesian sauce and just observed the details. Fresh carnation in a vase. Disposable table mats for babies and toddlers. Ketchup packet neatly organized. Being greeted and checked in on by at least 1 manager and 3 employees.

Needless to say, Chick-Fil-A is a well-oiled machine with a great system. I wanted to know more. I was curious. I love a good read when it comes to successful businesses or people. One fine day, I noticed books on the counter. Books that were written by the Chick-Fil-A CEO himself, Truett Cathy. In true Truett Cathy form, he charged a measly $5 for books purchased in-store. "Wealth: Is it Worth it" was the title. I read it in two hours. He attributes his entire success and wealth to...you've got it...GIVING.

My idea of wealth, attaining success and being happy changed. While I am all about becoming wealthy to buy whatever I want and go on fabulous, exotic vacations, I changed my mindset and heart to give more. Doesn't have to be money, but time, energy, thoughts, prayers...those can all be given.

So, as this year comes to an end and I start writing down my 2016 goals (something I do every year), I think I'm going to do things a little differently. I'm going to write a list of what I'd like to give and see where that takes me.

Do what you love, love what you do

I've said it once and I'll say it again. I love what I do and don't ever drag myself out of bed in the mornings, don't dread Mondays and don't complain that I'm not where I should be in life...because I'm doing something I'm PASSIONATE about.

Since I was in high school, all I ever heard was to find something I was passionate about. What the heck does that even mean? I worked at numerous clothing stores in high school and college, like Banana Republic, Armani Exchange and Bloomingdale's. I loved clothes and accessories and I worked near them...was that being passionate? It didn't drive me. First job out of college, I worked for a civil engineering association in the international department and while I enjoyed being "international" and absolutely loved my boss (Hi Marisa!), it wasn't fulfilling. Over the next several years, I worked for different companies (executive search, retail, mortgage). I learned a TON along the way.

The biggest thing I learned...I don't like working for other people. Deep down, I knew there was an entrepreneur in me just waiting to come out. The biggest opportunity was always in front of me: Taekwondo. To run one of my dad's locations was the BEST thing that ever happened to me. I learned a lot about myself and grew as a person and businesswoman. It was at this point in my life, I learned what being passionate was all about.

Fast foward, I am DARN LUCKY to say I found another passion. Two in a lifetime?! Seriously counting my blessings here. I don't know how to put in words the daily excitement I have for being a Beachbody coach. The engaging conversations, listening to struggles, helping others live happier lives, pushing myself to be the best Julia there is...

I AM BLESSED.

DIY Hairclip and Hairband Holder

CJ and I are expecting a baby girl due in January. I am over-the-moon excited for my little girl's arrival. I can't wait to dress up in matching outfits with her. When she gets older, I can't wait to do all the girly things that moms do with their daughters.

We haven't decided on her name yet, so for now, I'll be referring to her as baby girl. Baby girl's nursery is slowly coming together. I'll be sure to post pictures of the final room. As an early gift, I received a few pieces of pink clothing, hats and hairbands. Hairbands. For years and years, I've secretly hoped I'd have a girl one day to dress her with beautiful hairbands. I haven't bought any yet, but I've no doubt baby girl will have a huge collection.

I got to thinking...what am I going to do with all the clips, bows and bands? Pinterest? Pinterest can be overwhelming with fabulous ideas, so I tried to stay away from it, but I was quickly drawn back to it. It's just the easiest place to save all my favorite ideas.

I came across pins for DIY hairclip and hairband holders and wanted to attempt making one myself. I have plenty of Pinterest fails, but I was confident this one wouldn't be so hard. It wasn't!

DIY Hairclip and Hairband Holder

Supplies:

* Frame of choice (I chose a 9x12 frame from Michaels. $9.99 with a 40% off coupon!)
* Ribbon (you can have fun with this. I kept it simple with a wide pink satin)
* Glue gun or super glue (I used super glue)
* 7/8" Cup Hooks (Bought at Michaels, but cheaper at Home Depot)
* Decorative flowers, butterflies, lettering, whatever you want!
* Measuring tape or ruler
* Pencil
* Scissors
* Powerdrill with drillbit smaller than 7/8" (CJ took care of this for me, so I don't know which size he used)

Instructions:

* Remove everything from the picture frame so you're left with only the frame.
* Decide how many strands of ribbon you want. I tried to keep in mind that hairclips have attachments and bows to them, so they'll stick out the sides a bit and space the ribbon out that way. 
* Measure the ribbon so you can glue from top to bottom. Cut.
* Measure how far apart you'd like the cup hooks and mark the spots with a pencil. I suggest keeping them at least 1.5" apart. If they're too close, the frame may crack. There's a little crack on the bottom of baby girl's frame. Not a big deal, but it'd be nicer if it wasn't there.
* Glue ribbon onto the frame. Let dry completely.
* Using the powerdrill, drill holes where marked. (CJ did this part for me, so I don't have other directions to give here).
* Hand screw in the cup hooks. (CJ did this part for me, so I don't have other directions to give here).
* Decorate the frame and you're done!

Overall, this was an easy project and something that baby girl will use for a few years. I can't wait to put it up on the wall :)

Carrot Coconut Curry Soup

A few weeks ago, my fridge was running on fumes. It was looking pretty bare. After exhausting much of food in the pantry and freezer, I wasn't left with much. 

I like to challenge myself in moments like these. Think like Rachel Ray. What can you make with what you've got?

Carrot Coconut Curry Soup!

It's got a bit of kick to it and it's so comforting. Add some bread to it and you've got yourself a meal.


Carrot Coconut Curry Soup
(Recipe from thekitchn.com)

Ingredients:

2 tablespoons coconut oil
1 onion, peeled and roughly chopped
6 cups carrots, unpeeled and roughly chopped
3 1/2 cups vegetable stock (
One 15-ounce can coconut milk
1 1/2 tablespoons freshly chopped ginger root
1 tablespoon curry powder
1/2 teaspoon chili flakes
Salt and pepper to taste


Instructions:

Heat the coconut oil in a large soup pot and add the onions. Sweat the onions on medium heat for about 7 minutes. Add the carrots and cook for another 5 minutes. Pour in the stock and coconut milk. Add the ginger, curry powder and chili flakes. Put a lid on the pot and cook until the carrots are softened, about 10 or 15 minutes.

When carrots are soft, carefully blend the soup in batches in a blender or use an immersion hand blender and puree until smooth. Season with salt and pepper and garnish with fresh herbs, and more chili flakes, if desired.

Gluten-Free Pumpkin Pancakes

I am officially OBSESSED with all things pumpkin. I want to get my hands on everything!

I had an OB ultrasound this morning (baby girl at 24 weeks is healthy and beautiful!) and on the way home, I had a serious sudden craving for pumpkin pancakes. I don't crave anything in particular this pregnancy (neither did I the last one), but if I want something, I just HAVE TO HAVE IT!

I happened to have leftover pumpkin puree from making the Pumpkin Apple Spice Vanilla Shakeology a few days ago. I also remembered a 2-ingredient pancake recipe I haven't made in awhile. It didn't take me long to to decide I was going to add some pumpkin puree to the pancake recipe to make a healthy version of pumpkin pancakes.

Gluten-Free Pumpkin Pancakes
Ingredients:
  • 1/4 cup pumpkin puree
  • 2 eggs (beaten)
  • 1 banana (ripe and mashed)
  • dash of pumpkin pie spice (optional, but highly recommended!)

Instruction:
  • In a bowl, beat 2 eggs with a fork. 
  • In another bowl, mash a ripe banana with a fork. 
  • Mix all ingredients until there are no banana lumps. 
  • In a pan on medium high heat (not too hot, otherwise it'll burn real fast), put some coconut oil and swirl it around in the pan. 
  • Pour little circles of pancake "batter" onto the pan. Keep a close eye and don't leave it on the pan too long. Once you see the edges cooked, flip over carefully. They will break if you're not careful. 
  • If your banana is ripe, that'll take care of the sweetness for you. If you really want some syrup, go right ahead!

Pumpkin Apple Spice Vanilla Shakeology

FALL IS HERE!!

I'm a summer baby and love summer, but there's something about fall. I love everything about it - the fall foliage, crisp air, and pumpkin everything. I am READY to try a bunch of pumpkin recipes starting NOW!

I just tried this Shakeology recipe and it's yummo! I may have added a little too much pumpkin spice, but it's delicious and healthy nonetheless. I also needed some extra sweetness and added some extra sugar. Whatever floats your boat!

Apple slices with PB and Granola

Being pregnant is a beautiful experience. A blessing. Feeling your little bun grow inside you is truly amazing. That being said, it does come with a few not-so-fun side effects. Currently, the biggest ailment I'm experiencing is heartburn/acid reflux. The muscles in the body relax and acid isn't kept down as well as it used to be. There are a few things to help with this. Tums is GODSEND. Not laying down after you eat helps a ton. Eating clean (no greasy, spicy or processed foods) helps a lot as well.

I was craving a crunchy, healthy snack. I've seen photos of this snack before and decided to give it a try.



Apple Slices with PB and Granola

Ingredients:

Any apple
Any nut butter
Granola

Instructions:

- Slice apples and core them (I took off the rubber piece of a baster and used the round part. It worked!)

- Spread your favorite nut butter (as much or as little as you want)

- Sprinkle granola

VOILA!

So easy and so delicious. A feel-good snack :)

Fresh Tomato Sauce

CJ came home with a box filled with tomatoes. We gave a few away to my inlaws and I didn't know what to do with the rest. Off the top of my head, I though I could make pico de gallo and caprese salad. After posting on Facebook, I received several replies: fresh tomato sauce!

Ok, Google. Let's go! I found a lot of recipes. I particularly liked this one website that broke down the process pretty well. I have to say I was nervous to try it. I didn't need to be because it was easy to make and SO FRESH & DELICIOUS!! I can't wait to try different recipes in the future.

Fresh Tomato Sauce
Recipe from The Kitchn

Ingredients:
-tomatoes 
-minced garlic
-salt/pepper to taste


Instructions:
- Boil a pot of water
- Prepare a large bowl of ice water
- Core tomato stems and make an X slit at the round end with a knife.
- Blanche tomatoes by placing them in boiling water for about 60 seconds or until skin starts peeling and looks wrinkled
- Scoop out the tomatoes and place them in the ice water
- Peel the skin off and discard
- Heat a pan on medium heat and throw tomatoes in
- Let simmer for 30 minutes
- add garlic, salt and pepper to your liking and taste towards the last 10 minutes

Pour over pasta and enjoy!

7-Day Water Challenge





I haven't made the formal announcement on the blog yet, but I recently became a Beachbody coach!! I am IN LOVE with E-V-E-R-Y-T-H-I-N-G about Beachbody. I will have to dedicate a post to it another time and I will, but today is all about WATER.

H20. Our body's made up of roughly 70% water and we NEED water to survive. I remember hearing long ago that while we can go weeks and weeks without food, we can only survive a week without water.

Luckily for me, I freaking LOVE water. I prefer it to soda and juice. It quenches my thirst. I also prefer room temperature water, which is great because it's recommended room temp water is the best for your body to absorb it properly.

On Facebook, I announced a 7-Day Water Challenge that starts today. ANYONE can do it from ANYWHERE. You take your weight, divide that by 2 and that's how many ounces of water you should be drinking each day.  It's really not as hard as it sounds if you're aware of it.

My only advice: stay near the restrooms!

I've had FANTASTIC feedback all day and it's been fun to do this challenge with people who want to lead healthier lives.

GET YOUR DRINK ON! Let's pop some bottles! Water bottles, that is.

Shaun T...you are THE MAN! CJ and I think so.

Unless you've been living under a rock, I think it's safe to say that everyone knows who Shaun T is. Insanity. P90x. He's an amazing fitness professional who is NOT all talk. The man knows what he's talking about.

I'm currently on week 2 of a 10 week program. It is so easy to do. ONLY 25 minutes a day and I am drenched in sweat. I can't keep up with every count and every move and I do the modified moves when I need to. Even with modified moves, I get in an awesome workout.

It's gotten to the point where I CRAVE working out. I don't dread it. I look forward to it. I really am impressed with myself...or rather Shaun T's workouts.

Wedding Speech to Rina

One of my besties, Rina, married the love of her life, Joon, on May 1. I was honored to stand by her side as co-matron of honor. This post is dedicated to Rina and Joon.

My name is Julia and I am Rina's co-matron of honor. I have known Rina since middle school. We attended the same middle school, high school and college. We've journeyed throughout life together. I could not be happier for Rina and Joon. They are a perfect match made in heaven.

When a man looks for a woman to call his wife, he looks for several qualities. He wants a woman who is smart, beautiful, fun, loving and caring. Rina is all those qualities. I've been trying to think of a story that exemplifies all these characteristics and though there are many stories I could tell, there's one that happened rather recently that sticks out in my mind.

Awhile back, we were chatting on the phone and I mentioned to Rina how I wish I had a workout buddy because working out would be so much easier. Her reply? I've an idea. How about I come up right now, sleep over and we'll workout in the morning. For those of you who don't know, I live in a faraway land called Bel Air. It's an hour and a half away. Not a short drive.

Rina came, slept over and sure enough, we worked out in the morning and she went home. She spent a total of 12 hours with me.

I know it's not a big story, but it exudes her best qualities.

Joon, please take care of Rina. If you don't, I know where you live. Oh, and my husband and I both know Taekwondo. I wish you too all the best.

ABC Leglifts

When I'm feeling a little pudgy in my tummy area (which is quite often, btw), I start doing a bunch of ab exercises. Watching TV and doing some crunches or leglifts are easy, as long as you're in the mood. I need constant variety with my workouts, otherwise I get bored quick. For me, being bored means I stop working out. I get workout inspiration (is it called fitspo?) from magazines, Youtube, Pinterest, and of course, CJ.

I forget where I came across this simple, creative leglift exercise, but I get through it pretty quickly.

ABC Leglifts

Lay down on your back. 
Hands under your bum. 
Write out the alphabet with your legs.
Start with upper case letters, then do the lower case letters.

My Open Letter to Michael Buble

Dear Michael Buble,

I don't know when, where or how I was introduced to your music, but it has affected my life in more ways than one. During times of stress, loneliness and sadness, you were there to lift me up even for just a moment.  During my happiest times, you were there to celebrate with me.

Your music is like a drug. A sense of calm and peace overcomes me. Hope is renewed. Happiness is restored. Life is great. Add a glass of red wine and I'm in utopia.

Can I share with you a little ritual I've established whenever I need Julia time? I go into my bathroom, lock the door, play your music and paint my nails. Other times, I put on a pair of headphones, drink a glass of wine and mindlessly explore the internet. I am in my own world. I come out a happier Julia. I'm sure my husband and son will thank you one day.

Healthy Tuna Salad

Thanks to a friend who shared this recipe, I think I eat this a few times a month. It's so healthy, so guilt-free, so easy.


Healthy Tuna Salad

Ingredients:

1 can of tuna
1 avocado
1 lemon (juice squeezed)
2 Tablespoons of mustard
1/4 of a red onion diced
1 rib of celery diced
2 slices of wheat bread

Instructions: 

Mix all the ingredients (except the wheat bread) with a fork.

Spread onto the slice of wheat bread and enjoy!

For an even healthier version, eat with cucumbers.

Treadmill Workout - The Side Run

I enjoy running. It's a statement I never thought I'd say. I dreaded running the mile when I was in Elementary and Middle school. I joined the track team in High School and learned to sprint and relay. Since then, my love for running grew. I don't run with music like the rest of the world. I enjoy the fresh air, letting my thoughts run wild and hitting the pavement. Running is therapy.

While I prefer running alfresco, running on a treadmill isn't bad. The treadmill allows me to do things I can't necessarily do or wouldn't want to do outdoors. For instance, on the treadmill, I can run on a super high incline whenever I want. I can also do the side run. I don't see myself doing this outdoors in public. I'm sure there's a proper name, but I call it the side run.

I can't take credit for this. I learned this move from Shonda. I copy a lot of a exercises from her. She makes it look so easy. I haven't yet attempted to run backwards. I know myself all too well. It's public humiliation just waiting to happen.

Rice Crackers with Almond Butter

If I've got rice crackers and almond butter laying around, I put them together for a super easy and healthy snack. My favorite are brown rice crackers, but I don't have any right now. Plain rice cracker rolls will have to do.

Spread the almond butter on the rice crackers and enjoy!

10 Minutes of Sun

With the weather slowly warming and the sun brightly shining, I've been heading outdoors. Since it's still chilly, I stay out for about 10 minutes. It's those 10 minutes that I leave the social media/email/text/worldwideweb world and focus on the simple things in life - fresh air and warm sun. Whether it's taking a walk with Christopher or hanging in our driveway blowing bubbles, basking in the sun seems to be a very happy time.

There are numerous benefits from hanging in the sun, but I'll name my top 3 faves:

1) The sun helps our bodies produce Vitamin D, which is needed for bone health and supporting our immune system.

2) Being in the sun makes us HAPPY! Rainy weather makes us feel blah and sunny weather improves our mood.

3) Sun = sleep. I'll vouch for that. Ever recall basking in the sun at the beach and feeling really sleepy? Getting the proper amount of sunlight every day helps us snooze.

Smoked Salmon and Avocado

I haven't been in the mood to cook for weeks now, but a girl's gotta eat. I've been sticking to easy, but healthy meals and snacks. This recipe is super easy and can be enjoyed as a light meal or snack.

Slice an avocado.
Wrap a strip of smoked salmon around the avocado.

Spring has sprung

I don't think I've ever looked this forward to spring. I'm feeling a sense of renewal, excitement and there's even a bit of pep in my step. Winter really got to me this year. I definitely suffered from S.A.D. (season affective disorder). Was in a funk, but who cares about that now because I am feeling back to my old self!

I don't need more reason to celebrate life other than to be happy with today. HAPPY SPRING!

Enjoying the little moments

Recently, my mind has been on the topic of happiness. What defines happiness? What makes me happy? If I'm unhappy, what can I do to turn things around?

There isn't one answer. While I'm figuring it all out, I have learned to appreciate the small moments.

A few days ago, we had about a foot of snow. Schools closed. Our dojang was closed. CJ waited until the snow was pretty much done falling to go out and use the snowblower. We bought one earlier in the winter season and it was the first time using it. I wanted to see it in action.  While CJ was getting it ready, I opened the front door. Luckily, we installed a storm door, so we could enjoy the outside view without the cold getting in.

As CJ was clearing the driveway, Christopher was staring, watching him quietly and intently. As Christopher was watching CJ. I was watching Christopher. Time stood still. I was fully enjoying this moment. He was so intrigued by what his daddy was doing. The noise the snowblower made had him saying woo woo wow woo. He must've stood there for 10 minutes. For an 18 months old toddler, that's a pretty long time.

That little moment made my day.

Blogilates

Recently, a friend texted me saying I had to download this great fitness app called Blogilates. This friend introduces me to all sorts of cool apps, from baby apps to photo printing apps. They're all great, so I trusted Blogilates would be just as great. Immediately, I downloaded the app and like a kid in a candy store, I smiled at all the clean eating recipes and at-home workout videos.

As I mentioned in a previous post, I fell off the health wagon for a little bit and I wanted to try the shortest workout video available. I chose the 6 minute arm workout. This arm workout was different from any arm exercises I've done before and I could do it in the comfort of my living room while watching Christopher play.

Cassey Ho creates workouts into bite-sized pieces, which I love. The thought of working out for an hour can be exhausting alone. Her videos are all pretty short, so I feel like I have no excuse. Today is day 3 of following her workouts. Let's do this!

Raspberry Coconut Smoothie

I kind of fell off the wagon this past week with eating clean. I blame it on the winter blues. I've been suffering from it. Bleh. I am trying lots of little things to help boost my mood - got my hair trimmed, painted my toes bright pink, worked out and looked at videos of cute kids and puppies. I guess I feel better today because I woke up craving something healthy.

Smoothies are the easiest breakfast, in my humble opinion. Throw a bunch of things in a blender and press a button. Doesn't get easier than that.

This smoothie is different from all the other ones I've made so far because of coconut milk. It's a welcomed change and best of all, it was baby approved.



Raspberry Coconut Smoothie
Recipe from The Gracious Pantry

Ingredients:

  • 1 (15 ounce) can light coconut milk
  • 1/2 cup frozen raspberries (no sugar added) or 3/4 cup fresh raspberries.
  • 2 tablespoons water (optional)
  • 1/4-1/2 teaspoon cinnamon
  • 2 tablespoons honey or maple syrup
Instructions:

Add all ingredients into a blender and blend!

Her core filled with ecstasy.  She watched as the neatly folded stacks of laundry rose higher and higher.  Socks.  Underwear.  Shirts.  Shorts.  Reaching their peak.  And just as she thought they might topple over, he moved each of them to the basket, arranging them by family member so to efficiently distribute them to their final resting place.

“I’m going to leave you alone for a moment.  I need to go put these things away.”

As he walked down the hallway toward the bedroom, she watched his tight buttocks sway back and forth, disguised by his baggy gym shorts.  Her eyes were distracted by something on the right hind pocket?  What could it be?  And then she remembered…

Just this morning, she awoke to a sun-drenched room.  There were squeals of delight coming from the kitchen.  Yes, her prince had risen before her and whisked the children off to the breakfast table.  There, he had lovingly prepared a meal.  Toast.  Milk.  Fruit salad.  And yes, oatmeal.  Oh, the oatmeal.  And not the kind from the paper pouch.  No.  He was too much man for that.

These were McCann’s Steel Cut Oats.  Steel. Cut. The kind that required warm water, heated to boiling.  Heat.  Hot heat.  Then turned down to a simmer to bubble and roll.  Full of fiber and tasteless.  Nutritious.  And he had somehow encouraged the kids to eat them.  To eat them all.  All except the blob that his daughter had dropped in his chair.  The blob that now adorned his rounded haunches.  Rugged and beautiful.  Like the freshly cleaned kitchen cabinet doors he had left gleaming, scented with Clorox wipes and Endust.

As she paced through the living room and into the dining area, bleary-eyed and foggy from a good night’s sleep, his voice cut through the clutter.

“It’s just how you like it. Hot. And sweet.”

She grabbed her cup of coffee and took a sip. He had lightened it with a heavy dose of Pumpkin Spice non-dairy creamer.


A real man remembers a woman’s lactose intolerance, she thought.

She glanced up at him to see his strong hands wrapped firmly around the shaft.  The shaft of the mop.  Sweat covered his brow.  He was moving gracefully.  Back       and       forth.  Back        and  
    forth.  To the rhythm of beautiful music.  Like Norah Jones singing the theme song to a LifeTime movie starring Meredith Baxter-Birney as a woman scorned, then finding love again after fifty.

As she watched, his graceful movements increased to a quickened tempo.  Back     and     forth.  Back   and    forth.  Back  and  forth.  Back and forth. Back n forth.  Backnforth.  Bcknfrth.  The music now more Beyonce than Norah.  His movements strong, yet controlled.   The sweat dripping off the end of his nose.

It was a stubborn stain.

Grape juice?  Spaghetti sauce?  A smashed pea?  No one could be sure.  But what was certain is that he was dominating this kitchen floor.  Unleashing his power.  And she surrendered to it.  Submissive.

She felt a warm breath on her ear lobe, waking her from her flashback of the morning.  The clouds parted ever so slightly.

“Lift your legs,” said the deep baritone.

It was almost a whisper, hardly registering in her sleepy haze.  She hesitated.  What was he asking?

“Just for a moment,” said the voice.  “Then you can relax.  Please.  Lift your legs.”

She had fallen asleep in the afterglow of the laundry.  Fading into the couch like toddler spit up.  So much had happened since the folding.  But she did as the voice commanded.

As she contracted her abdominals, finely honed by Zumba and Ben and Jerry, her feet broke free from the carpet.

It was like an orchestra.  As she moved, so did he.  Finely tuned movements.  Sliding the great machine under her heels.  The sight made the hair on her arm stand on end, like the nap of the carpet each time he withdrew the vacuum.  The pattern he left on the rug was pure perfection.  Abstract art with a purpose.  With each pass, eons of pet hair and foot falls disappeared in an instant as the high traffic area in front of the sofa was tamed.  Her muscles were burning, but it hurt so good.

“Please don’t stop.  Don’t stop!  Don’t stop!” she wailed.  “That looks so good!"

“I have to.”  He replied.

“No! But why?” she asked.  “You were almost finished.”

“Oh, I promise I’ll be back.  But I have to go.”

Anticipating, almost as if he was channeling  Radar O’Reilly in a scene from M.A.S.H., he moved toward the hall bath.   A tiny voice cried out, “Mommy!  Wipe my bottom!”  It was in that moment that she knew why he couldn’t finish.

He bounded to the bathroom, still sporting the smashed oatmeal brooch on his behind, prepared for something dirty.  Very dirty.  She knew it well.

She scanned the house to find herself firmly ensconced in Camelot.  Every room had been scoured.  The wood floors were shining.  The dust had all been wiped away.  There was a crock pot simmering on the kitchen island.  What could it be?  Pot roast?  Gumbo?  Chicken and dumplings?  It could be dishwater seasoned with floor sweepings for all she cared.  She hadn’t lifted a finger all day, and it was nearly dinnertime.

The rest of the evening was a blur of activity.  She was like the queen bee, with everyone buzzing around.  Food was eaten without complaint.  Dishes were washed and children bathed.  Bedtime stories were read while she watched HGTV in the other room.  She sat alone in her happy home, marveling at the man who made it all possible.  Her heart swelled like the giant blister that now covered her husband’s mop-pushing hand.

“You coming to bed?” he inquired.  “I’ve got something planned just for you.”

Her spine tingled.  She looked in his direction.  He had showered, shaved, and smelled like Irish Spring.  Not the old fashioned scent, but one of the new, fancy smelling-kind.  Somewhere between Old Spice and Axe body spray.

“Oh yes.” She delighted.  “I’ll be right there.”

“I’ll be waiting.”

She changed into a tank top and slipped on her favorite sweat pants that she’s worn since her days as a Kappa Delta.  She turned toward the bed and saw him.  Ready.  Waiting.  Willing.
She slipped between the sheets and turned away, unable to look into his piercing hazel eyes.  She felt a hand on her back.  It moved slowly southward, then northward again, with a subtle pressure.  A squeeze of the shoulder, a tease of the neck.  Fingers through the hair.  For fifteen minutes his hands moved all over her, from waistline to necklace, relieving the tension brought about by the everyday.  She let herself go.  Free to enjoy the backrub.

He slowly slid over and kissed her shoulder.

“I have a headache,” he whispered.  “I love you.  Goodnight.”

“I love you, too.’ She echoed.  And, along with her gorgeous, hunk of a man, she drifted off to sleep.

Smiling.

Spooning.

Satisfied.

Friday the 13th

Friday the 13th has new meaning now. No longer is it a superstitious day where I cross my fingers and hope nothing bad happens. No longer will I think of Freddy Kreuger and Nightmare on Elm Street. Nope. Going forward, Friday the 13th will mean a day filled with LOVE.

CJ's cousin, Frank, and his beautiful bride, Jowanka, had a lovely, intimate courthouse wedding. CJ was a witness at the ceremony and had to go straight to work, but Christopher and I represented our family of three at the reception. The reception was one of my most favorite wedding receptions.

It was held in a private room at Pairings Bistro. Pairings is a gem of a restaurant in Bel Air. With extensive offerings of wine and beer, this restaurant does not disappoint. The food pairs perfectly too! (no pun intended). What made this reception stand out above all others was the wonderful simplicity and sincerity of it all. Sitting at a long rectangle table were 13 guests. Thirteen guests on Friday the 13th.

It was a scene from the Sex and the City movie where Carrie and Big get married at a courthouse and have a reception at a local diner where they fully enjoyed themselves. No need to greet hundreds of guests, no need to smile the same smile with different people, no dog and pony show. It was purely about Frank, Jowanka and their son, Kai.

Everyone got to talk to one another, catch up, and watch the kids as they were in their own little worlds. Glasses were filled with wine, conversations were meaningful, and memories were to be had. As cliche as it sounds, I really could smell the love in the air. 

The little details added the perfect touches and showed me that you do not have to spend a fortune for a wedding to be memorable. They say they will have a more formal ceremony and reception, but I don't know how this will be topped. This day, Friday the 13th, will forever be etched into my memory as a day of love and happiness.

Cheers to you both, Frank and Jowanka. I am truly, genuinely so happy for you. May God bless you with joy, laughter, fun and of course, babies.

Coconut Lime Chia Pudding

I have a few ways of eating chia seeds. Chia pudding is definitely an easy and delicious way to eat 'em. It's so easy to make, you have no excuse not to! I've got my eye on a chocolate chia pudding recipe. Yum!

With the lime and coconut flakes, this pudding is refreshing and very easy to eat. After finishing the bowl, I wanted more!



Coconut and Lime Chia Pudding
Recipe adapted from Some Day I'll Learn

Ingredients:
  • 2 Tablespoons of Chia Seeds
  • 1 Cup of Almond Milk
  • Zest of one Lime
  • Shaved Coconut Strips
Instructions: 
  1. Whisk chia seeds, milk and half of the lime zest together in a bowl. Wait 5 minutes and whisk again. Cover and refrigerate for at least 2 hours.
  2. Top with shaved coconut strips and remaining lime zest.

Avocado and Egg Toast

I love toast. I love avocados. I love eggs. This is a combination of all three. What's not to love?


Avocado and Egg Toast
 

Ingredients:

1 avocado
2 eggs
1 piece of toast

Instructions:
  1. Mash an avocado with a fork.
  2. Scramble eggs in a pan.
  3. Toast a slice of bread.
  4. Top the toast with avocado, then eggs.
  5. Sprinkle some salt and pepper.

A Rare Moment


Yearning for time for myself, I did something different this morning. Instead of the usual routine of making breakfast, putting away dishes, and turning on the morning news, I decided to try something new.

I made myself a hot cup of tea and waited for the sun to rise. I closed my eyes and took in 10 deep breaths, focusing on the energy going in through my nose and out through my mouth (Thanks Bikram Yoga!). I repeated my affirmations (Something new I am trying). I said all the things I was grateful for in my life right now (I should do this every day!).

Pure Julia time. No obligations. No looking at the list of things to do. The dishes could wait. I wasn't hungry yet. CJ and Christopher were still asleep. I was making myself a priority and making time for me.

I've always been able to carve time for myself whether it was to paint my nails, read a fashion magazine or watch a TV show uninterrupted. Today, I was slowing things down...way, way down. I can honestly say I lived in the moment.

I was just...being.

Strawberry Banana Smoothie

I love smoothies. They're just an easy way to have some variety in our diet. It's also an easy way to use up fruit and veggies that are sitting in the fridge just asking to be eaten. This recipe is super easy and something I know all three of us will enjoy.

I have been trying to provide healthy snacks for Christopher. Cheerios, bread and crackers are too easy to hand to him. Sure, they're easy to give, but I feel guilty feeding it to him every day.


Strawberry and Banana Smoothie

Ingredients:

Handful of strawberries
2 Bananas
1/4-1/2 cup of almond milk (whole milk for babies)

Instructions:

Put all ingredients in a blender and blend away!

Quick Beef and Vegetable Soup

Winter is for comforting foods. My favorite thing to cook during the winter: soups! I'm always trying new soup recipes. No soup discrimination going on in this house. While I love a good bone broth, sometimes I just don't have the time for it. I need quick meals done in 30 minutes or less.

This soup recipe is one of my faves this season. It's easy, healthy and I feel really good about feeding it to my family.

The great thing about this soup is that you can really use whatever veggies you have in the fridge. You could even omit the beef and make it a veggie soup. Oh, the possibilities.




Quick Beef and Vegetable Soup

Ingredients:

1 lb ground beef
Large can of chicken broth
1 14.5 oz can of diced tomatoes (don't drain)
2 tablespoons of tomato paste
Frozen vegetables (peas, corn, carrots, beans)
1 can of garbanzo beans, rinsed and drained
Half a medium onion, chopped
Italian seasoning

Instructions:

Cook ground beef and onion in a skillet until cooked. Drain.

In a pot, boil the chicken broth and add in the beef, onions, and all the other ingredients. Bring to a boil and let it simmer for 10 minutes.


Julia's Notes: I serve this with rice, but I'm sure it will taste great with crusty bread or a sandwich. Minced garlic would be great. Thought about adding mini pasta to this - maybe next time. Super easy and quick recipe!

How To Cook the Perfect Prime Rib Roast

2015! Yeah, yeah. I'm a little overdue with a post. The holidays had it busy moments and wonderfully-filled with oodles of #CJuliaChristopher time. It was perfect. The new year crept up on us, CJ and I got back to work mode and looking at the calendar, it's already mid-January. Time. Flies. Too. Fast.

I've been doing a ton of cooking the past several weeks, which means lots of recipes to post!

For Christmas Eve, I had my family come over for a prime rib dinner. That's right. Prime rib. I was so nervous before and during the cooking. It's an expensive piece of meat and it's the main star of the meal, so if I messed this up, everyone was going to be eating a lot of sides. I bought the most expensive meat thermometer (the wireless kind) and guess what? It decided to break! No worries though, because no snafu was going to mess up this dinner I had planned two weeks ahead for. With a little bit of luck and great timing, the prime rib roast turned out delicioso. That's Spanish for delicious, in case you're wondering.

I found a pin on Pinterest that basically turned out to be the bible for prime rib roasting. From choosing the right meat to carving directions, it had every bit of information needed to succeed.


 
 
Normally, I include the cooking instructions in my posts, however, there is so much information, I can not pick and choose. I highly suggest reading the entire thing. I followed the directions exactly and I got great results. A friend made this without bringing the meat to room temperature and hers turned out well, so I think you may be able to skip that step.
